The Diversity of Indian Cuisine by Region

India has an enormous diversity in cuisine in different parts of the country. This is a reason why some Indian restaurant dishes may taste different from others. Just like how Northern Italian and Southern Italian cuisine are distinguished by different ingredients and flavors. Here are three regions of India and what their cuisine is known for.
North Indian cooking is distinguished by using a lot of dairy products; milk, paneer, ghee (clarified butter), and yoghurt. Gravies are typically dairy-based. Other common ingredients include chilies, saffron, and nuts.
East Indian cooking is famous for its desserts, many of the sweet dishes now popular in Northern India. It is also known for using a lot of poppy seeds.
South Indian cooking uses rice as the staple grain, a variety of pickles, coconut and curry leaves. Biryani is a popular dish.
